Yesterday i tried to bake some blueberry muffins, i must say blueberries are firstly hard to find in singapore n they are damn expensive, 1 can of blueberries cost 9 bucks.
Went online to search for some blueberry muffin recipe, found 1 n started work.
The first batch which i made yesterday, i must say it totally doesn't look like muffins. Instead its like some cookie instead. Not enuf butter i suppose and i took the wrong measurements. Using some universal measurement conversion i found on fri, i know that 1 cup = 229g. BUT very impt, this mearsurement DOES NOT apply for all ingredients.
Different ingredients have different weight for 1 cup.
Measurements as follows:-
Flour => 1 cup = 128g
Sugar => 1 cup = 201g
Milk => 1 cup = 267g
Butter => 1 cup = 250g = 2 sticks
AND VERY IMPORTANTLY, always sieve the flour before you use them, if not you'll end up with some white spots in ur cake coz the flour coagulate together n its hard to get them to disperse in the mixture.
There's always the problem of mixing the butter with milk, i've found a certain method to do them the easier way, if not there's no way to get butter to mix well with milk. A solution i found out was to immerse the bowl you are using in a water bath hence the butter wouldn't get too melted until u see the oil layer and another is to do short time microwaving of the butter milk mixture.
Anyway forget about my failed batch yesterday, i changed the recipe n here's it.
225g flour
3 tsp baking powder
1/2 tsp salt
75g butter
100g sugar
1 egg
200g milk
1 tsp vanilla
1 cup blueberries (amt up to you)
1. Preheat oven to 200deg
2. In large bowl, mix flour, baking powder and salt.
3. In 2nd bowl, squish butter and sugar until mixed. Beat in the eggs, milk and vanilla until smooth, pour into first bowl.
4. Stir until mixed.
5. Fold blueberries into the batter.
6. Grease muffin tray, fill about 3/4 full, bake for around 25mins
Makes 12 Muffins.
